
Black Sesame Soup / Paste (黑芝麻糊)
A warm, velvety dessert made from finely ground black sesame seeds. Smooth and nutty, sometimes topped with osmanthus. Deeply flavorful and nourishing.

- 1Black sesame seeds (200g)
- 2Glutinous rice flour (50g)
- 3Rock sugar or brown sugar (80g)
- 4Water (800ml)
- 5Osmanthus syrup (optional, for garnish)
Instructions
- 1Toast black sesame seeds in a dry pan over medium heat until fragrant, about 3–4 minutes.
- 2Blend toasted seeds with 400ml water in a high-speed blender until completely smooth.
- 3Mix glutinous rice flour with 50ml cold water to make a smooth slurry.
- 4Pour sesame paste into a saucepan with remaining water and bring to a gentle simmer.
- 5Add rock sugar and stir until dissolved.
- 6Slowly stir in the rice flour slurry to thicken.
- 7Simmer on low heat for 5 minutes, stirring constantly.
- 8Serve hot in bowls, drizzled with osmanthus syrup if desired.
