- 1200g ground almonds (almond flour)
- 2300g caster sugar
- 36 egg yolks
- 42 whole eggs
- 550g butter, melted
- 6Zest of 1 lemon
- 7Pinch of cinnamon
- 8Icing sugar for dusting
- 9Butter and flour for the tin
Instructions
- 1Preheat oven to 170°C (340°F). Grease and flour a 20cm round cake tin.
- 2Cook sugar with 100ml water to make a thick syrup (thread stage, about 110°C).
- 3Remove from heat and add ground almonds — mix well.
- 4Allow to cool for 5 minutes, then beat in egg yolks and whole eggs one at a time.
- 5Stir in melted butter, lemon zest, and cinnamon.
- 6Pour batter into the prepared tin and bake for 30–35 minutes until set and golden.
- 7Cool completely in the tin before unmoulding.
- 8Dust generously with icing sugar and serve in thin slices — it is very rich.
