
Banana in Coconut Milk
Ripe bananas simmered in sweet coconut milk. Simple, comforting, and wonderfully aromatic.

- 14 ripe but firm bananas (peeled, halved lengthwise)
- 21 can (400ml) coconut milk
- 31 cup water
- 43 tbsp sugar
- 51/2 tsp salt
- 62 pandan leaves (knotted)
Instructions
- 1Bring coconut milk, water, sugar, salt and pandan leaves to a gentle simmer.
- 2Add bananas and simmer on low heat for 5–7 minutes until just tender — do not overcook.
- 3Remove pandan leaves.
- 4Serve warm in bowls with plenty of coconut milk broth.
- 5For the fried version: coat banana halves in batter and deep-fry until golden. Serve with coconut ice cream.
