- 1500g thick Greek yogurt
- 21 large cucumber, peeled, deseeded, coarsely grated
- 32 cloves garlic, finely minced
- 42 tbsp fresh dill, finely chopped
- 51 tbsp fresh mint, finely chopped
- 62 tbsp extra virgin olive oil
- 71 tbsp white wine vinegar or lemon juice
- 8Salt to taste
- 9Dried mint and olive oil to garnish
Instructions
- 1Grate the cucumber coarsely and squeeze out as much liquid as possible using a clean kitchen towel. This is key to preventing a watery dip.
- 2In a bowl, combine the yogurt and grated cucumber.
- 3Add minced garlic, fresh dill, fresh mint, olive oil, and vinegar or lemon juice.
- 4Mix thoroughly, season generously with salt, and taste to adjust.
- 5Chill for at least 30 minutes before serving to allow flavors to develop.
- 6Serve in a bowl drizzled with extra olive oil and garnished with a pinch of dried mint and a sprig of fresh dill. Serve alongside warm bread, grilled meats, or as part of a meze spread.
