- 1500g fresh squid (cleaned, cut into rings)
- 21 cup flour
- 3½ cup cornmeal or semolina
- 41 tsp salt
- 5½ tsp black pepper
- 6½ tsp paprika
- 72 eggs (beaten)
- 8Oil for frying
- 9Marinara sauce and lemon wedges for serving
Instructions
- 1Pat squid rings dry. Season flour and cornmeal with salt, pepper, and paprika.
- 2Dip rings in beaten egg, then coat in the flour-cornmeal mixture.
- 3Heat oil to 190°C (375°F). Fry squid rings in batches for 1–2 minutes — do not overcook or they will become rubbery.
- 4Drain on paper towels. Season with extra salt immediately.
- 5Serve with marinara sauce, aioli, and lemon wedges.
