- 11 cup browned unsalted butter (cooled to room temperature)
- 21¼ cups brown sugar
- 3¼ cup granulated sugar
- 42 large eggs
- 52 tsp vanilla extract
- 62 cups all-purpose flour
- 71 tsp baking soda
- 81 tsp fine salt
- 910 oz Valrhona dark chocolate chunks
- 10Smoked Maldon salt (for finishing)
- 11Roasted banana ice cream, hot fudge sauce (to serve)
Instructions
- 1Preheat oven to 350°F. Brown butter in a saucepan over medium heat until golden and nutty. Transfer to a mixing bowl and cool to room temperature.
- 2Beat browned butter with brown sugar and granulated sugar until fluffy, about 3 minutes.
- 3Add eggs one at a time, beating well after each addition. Mix in vanilla.
- 4Fold in flour, baking soda, and salt until just combined.
- 5Stir in most of the Valrhona chocolate chunks, reserving a handful for the top.
- 6Press dough evenly into a well-seasoned 10-inch cast iron skillet. Press reserved chocolate chunks into the surface.
- 7Sprinkle generously with smoked Maldon salt.
- 8Bake 20–24 minutes until the edges are set and golden but the centre remains gooey.
- 9Serve warm directly from the skillet with roasted banana ice cream and hot fudge sauce.
