Bird's Nest Soup (Sweet Version)

One of China's most luxurious desserts: edible swiftlet nests double-boiled with rock sugar, goji berries, or egg whites. Prized for its delicate gelatinous texture and legendary health benefits.

  • 1Dried edible bird's nest (50g)
  • 2Rock sugar (100g)
  • 3Water (500ml)
  • 4Goji berries (1 tbsp)
  • 5Egg whites (2, optional)

Instructions

  1. 1Soak dried bird's nest in cold water for 4–8 hours until fully expanded and softened.
  2. 2Rinse gently and pick out any feathers.
  3. 3Place softened bird's nest in a double boiler with water and rock sugar.
  4. 4Steam on gentle heat for 30–40 minutes until silky and gelatinous.
  5. 5Add goji berries and egg whites (if using) in the last 5 minutes.
  6. 6Serve warm or chilled, optionally garnished with osmanthus honey.
