Delicate steamed dumplings filled with a savoury mix of minced pork and shrimp, usually topped with crispy fried garlic and served with a dark soy dipping sauce.

- 1200g minced pork
- 2200g minced shrimp
- 32 tbsp oyster sauce
- 41 tbsp soy sauce
- 51 tsp sesame oil
- 61 tsp sugar
- 71/2 tsp white pepper
- 82 cloves garlic (minced)
- 930 wonton wrappers (round)
- 10Crispy fried garlic for topping
- 11Dark soy sauce for dipping
Instructions
- 1Mix minced pork, shrimp, oyster sauce, soy sauce, sesame oil, sugar, white pepper and garlic together thoroughly.
- 2Place a wonton wrapper in your palm. Add 1 tsp of filling in the centre.
- 3Fold and pleat the edges to form a cup shape, leaving the top open.
- 4Place dumplings in a steamer lined with baking paper.
- 5Steam over boiling water for 8–10 minutes.
- 6Top with crispy fried garlic and serve with dark soy dipping sauce.
