Ingredients

  • 1800g beef fillet or sirloin, cut into 2.5cm cubes
  • 23 cloves garlic, minced
  • 32 tbsp soy sauce
  • 41 tbsp fish sauce
  • 51 tbsp oyster sauce
  • 61 tsp sugar
  • 72 tsp freshly ground black pepper
  • 82 tbsp vegetable oil
  • 92 bunches watercress
  • 102 tomatoes, sliced
  • 111 red onion, thinly sliced
  • 12Dipping sauce: 2 tbsp lime juice, 1 tsp black pepper, 1 tsp salt

Instructions

  1. 1Marinate beef cubes with garlic, soy sauce, fish sauce, oyster sauce, sugar and 1 teaspoon black pepper for 30 minutes.
  2. 2Heat a wok or heavy pan over very high heat until smoking. Add 1 tablespoon oil.
  3. 3Add half the beef cubes in a single layer. Sear for 1 minute without moving, then shake the pan to toss.
  4. 4Cook for another 1-2 minutes until browned on all sides but still pink inside. Remove and set aside.
  5. 5Repeat with remaining beef and oil.
  6. 6Arrange watercress, tomato slices and red onion on a serving platter.
  7. 7Pile the seared beef on top of the salad.
  8. 8Mix lime juice, remaining black pepper and salt for the dipping sauce. Serve on the side.
