
Psari Plaki (Greek Baked Fish)
White fish fillets baked in a fragrant sauce of tomatoes, onions, garlic, white wine, capers and herbs.

- 14 white fish fillets (cod, sea bass or bream)
- 2400g tinned tomatoes
- 31 onion (sliced)
- 43 cloves garlic (sliced)
- 5100ml dry white wine
- 62 tbsp capers
- 7Juice of 1 lemon
- 83 tbsp olive oil
- 9Fresh parsley, dried oregano, salt and pepper
Instructions
- 1Fry onion and garlic in olive oil until golden. Add tomatoes, wine, capers and oregano; simmer 10 minutes.
- 2Pour half the tomato sauce into a baking dish.
- 3Lay fish fillets over the sauce; season with salt, pepper and lemon juice.
- 4Spoon remaining sauce over the fish; drizzle with olive oil.
- 5Bake at 180°C for 20–25 minutes until fish is just cooked through and sauce is bubbling. Finish with fresh parsley. Serve with crusty bread.
