
King Crab & Uni Jeon
Luxurious Korean pancake filled with Alaskan king crab and sea urchin (uni), served with a delicate soy-yuzu dipping sauce.

Ingredients
- 1200g Alaskan king crab meat, roughly chopped
- 280g fresh uni (sea urchin) roe
- 34 spring onions, cut into 5cm lengths
- 41 cup all-purpose flour
- 52 tbsp potato starch
- 61 egg, beaten
- 73/4 cup cold sparkling water
- 81/2 tsp salt
- 94 tbsp neutral oil for frying
- 103 tbsp soy sauce
- 111 tbsp yuzu juice
- 121 tsp mirin
- 131/2 tsp sesame oil
- 14Pinch of chilli flakes
Instructions
- 1Whisk together flour, potato starch, egg, cold sparkling water, and salt to form a light batter. Do not over-mix.
- 2Fold in the spring onions and king crab meat gently.
- 3Heat oil in a non-stick pan over high heat. Pour in half the batter and spread thinly.
- 4Carefully arrange uni roe on top of the wet batter immediately.
- 5Cook for 3-4 minutes until the bottom is golden and crispy. Flip carefully.
- 6Cook the other side for 2-3 minutes until golden. Remove and drain briefly.
- 7For the dipping sauce, whisk soy sauce, yuzu juice, mirin, sesame oil, and chilli flakes together.
- 8Cut the jeon into pieces and serve with the dipping sauce.
