
Caldeirada de Peixe
Rich Portuguese fish stew made with a variety of fresh fish, potatoes, tomatoes, onions, and herbs. A fisherman's classic.

- 11 kg mixed firm fish (sea bass, monkfish, cod), cut into chunks
- 2500g waxy potatoes, sliced
- 32 ripe tomatoes, chopped
- 42 onions, sliced into rings
- 52 green peppers, sliced
- 64 cloves garlic, sliced
- 7150ml dry white wine
- 84 tbsp olive oil
- 91 tsp sweet paprika
- 10Fresh parsley and bay leaves
- 11Salt and black pepper
Instructions
- 1Layer potatoes, onions, tomatoes and peppers in a wide heavy pot. Season each layer with salt, pepper, paprika and garlic.
- 2Nestle fish chunks on top of the vegetables.
- 3Pour over white wine and olive oil. Tuck in bay leaves and scatter parsley.
- 4Cover tightly and cook over medium heat without stirring for 25–30 minutes.
- 5Shake pot gently once or twice to prevent sticking — do not stir.
- 6Check seasoning and serve directly from the pot with crusty bread.
