- 1Beef or chicken (600g, large chunks)
- 2Coconut milk (400ml)
- 3Massaman curry paste (3 tbsp)
- 4Potatoes (300g, cubed)
- 5Roasted peanuts (50g)
- 6Onion (1 large, quartered)
- 7Cinnamon stick (1)
- 8Cardamom pods (3)
- 9Bay leaves (3)
- 10Fish sauce (2 tbsp)
- 11Palm sugar (2 tbsp)
- 12Tamarind paste (1 tbsp)
- 13Vegetable oil (2 tbsp)
Instructions
- 1Heat oil in a heavy pot over medium heat.
- 2Add Massaman curry paste and fry for 2 minutes until fragrant.
- 3Pour in coconut milk and bring to a gentle simmer.
- 4Add meat chunks and cook for 10 minutes.
- 5Add potatoes, onion, peanuts, cinnamon, cardamom, and bay leaves.
- 6Simmer on low heat for 30-40 minutes until meat is very tender.
- 7Season with fish sauce, palm sugar, and tamarind. Adjust balance of sweet, sour, and salty.
- 8Serve with roti or jasmine rice.
