- 1400g dried split broad beans (fava beans)
- 21 large onion (diced)
- 33 tbsp olive oil
- 4Juice of 1 lemon
- 51 tsp sugar
- 6Salt and white pepper
- 7Extra virgin olive oil for drizzling
- 8Fresh dill for garnish
- 9Thinly sliced red onion for serving
Instructions
- 1Rinse broad beans and soak overnight in cold water. Drain and rinse again.
- 2Sauté onion in olive oil until very soft and translucent.
- 3Add beans and enough cold water to cover by 5cm. Bring to a boil and skim foam.
- 4Reduce heat and simmer for 40-50 minutes until beans are completely soft and most water is absorbed.
- 5Blend to a smooth, creamy puree using a hand blender or food processor.
- 6Add lemon juice, sugar, salt, and white pepper. Adjust consistency with warm water if needed.
- 7Transfer to a serving plate, smooth the top. Drizzle generously with extra virgin olive oil.
- 8Garnish with fresh dill and sliced red onion. Serve at room temperature.
