- 12 cups fine bulgur wheat
- 22 ripe tomatoes (finely diced)
- 34 spring onions (finely sliced)
- 41 small onion (grated)
- 53 tbsp pomegranate molasses
- 63 tbsp tomato paste
- 73 tbsp olive oil
- 81 tsp cumin
- 91 tsp paprika
- 101 tsp chili flakes
- 11Juice of 1 lemon
- 12Small bunch fresh parsley (chopped)
- 13Small bunch fresh mint (chopped)
- 14Salt and black pepper to taste
Instructions
- 1Place bulgur in a large bowl.
- 2Dissolve tomato paste in 1.5 cups boiling water and pour over bulgur. Cover and let absorb for 20 minutes until soft.
- 3Add grated onion, olive oil, pomegranate molasses, lemon juice, cumin, paprika, and chili flakes. Mix well, kneading with hands.
- 4Add diced tomatoes, spring onions, parsley, and mint. Season with salt and pepper.
- 5Taste and adjust pomegranate molasses or lemon for balance.
- 6Serve at room temperature or slightly chilled, optionally wrapped in lettuce leaves.
