Jeju Black Pork Jeyuk Bokkeum
Spicy stir-fried Jeju Island black pork with vegetables in a special gochujang marinade. Rich, tender, and intensely flavorful.

- 1600g Jeju black pork shoulder, thinly sliced
- 24 tbsp gochujang
- 32 tbsp gochugaru (Korean chili flakes)
- 43 tbsp soy sauce
- 52 tbsp mirin
- 61 tbsp sesame oil
- 71 tbsp sugar
- 85 garlic cloves, minced
- 91 tsp ginger, grated
- 101 medium onion, sliced
- 114 spring onions, cut into 3cm pieces
- 121 tbsp vegetable oil
- 13Sesame seeds to garnish
Instructions
- 1Combine gochujang, gochugaru, soy sauce, mirin, sesame oil, sugar, garlic, and ginger in a large bowl.
- 2Add sliced pork and toss to coat evenly. Marinate for at least 30 minutes or overnight in the refrigerator.
- 3Heat vegetable oil in a large wok or skillet over high heat.
- 4Add sliced onion and stir-fry 2 minutes until softened.
- 5Add marinated pork and stir-fry 8–10 minutes until fully cooked, slightly caramelized, and the sauce is sticky and glossy.
- 6Add spring onions in the last minute.
- 7Transfer to a serving plate, sprinkle with sesame seeds, and serve immediately with steamed rice.
- 8Serves 3–4.
