  • 1500g fresh squid (cleaned, cut into rings)
  • 21 cup flour
  • 3½ cup cornmeal or semolina
  • 41 tsp salt
  • 5½ tsp black pepper
  • 6½ tsp paprika
  • 72 eggs (beaten)
  • 8Oil for frying
  • 9Marinara sauce and lemon wedges for serving

Instructions

  1. 1Pat squid rings dry. Season flour and cornmeal with salt, pepper, and paprika.
  2. 2Dip rings in beaten egg, then coat in the flour-cornmeal mixture.
  3. 3Heat oil to 190°C (375°F). Fry squid rings in batches for 1–2 minutes — do not overcook or they will become rubbery.
  4. 4Drain on paper towels. Season with extra salt immediately.
  5. 5Serve with marinara sauce, aioli, and lemon wedges.
