- 11 kg fresh carrots, peeled and grated
- 24 cups full-fat milk
- 3150g khoya (mawa), crumbled
- 44 tbsp pure ghee
- 51/2 cup sugar (or to taste)
- 61/2 tsp saffron strands soaked in 2 tbsp warm milk
- 71/2 tsp cardamom powder
- 83 tbsp mixed roasted nuts (cashews, almonds, pistachios)
- 92 tbsp raisins
- 10Silver leaf (varq) for garnish
Instructions
- 1Heat ghee in a heavy-bottomed pan over medium heat. Add grated carrots and sauté for 10 minutes until fragrant and slightly softened.
- 2Pour in the milk and cook on medium heat, stirring frequently, until milk is fully absorbed — about 35-40 minutes.
- 3Add sugar, crumbled khoya, and saffron milk. Stir continuously and cook for another 15 minutes until mixture thickens and leaves the sides.
- 4Add cardamom powder and half the roasted nuts. Mix well and cook another 5 minutes until the halwa is rich, glossy, and aromatic.
- 5Remove from heat. Transfer to a serving dish, garnish with remaining nuts, raisins, and finish with a delicate piece of silver leaf.
