- 1Wheat berries (1 cup, soaked overnight)
- 2Chickpeas (1/2 cup, soaked overnight)
- 3White beans (1/2 cup, soaked overnight)
- 4Rice (1/4 cup)
- 5Dried apricots (1/2 cup, chopped)
- 6Dried figs (1/2 cup, chopped)
- 7Raisins (1/2 cup)
- 8Sugar (1.5 cups)
- 9Rose water (2 tbsp)
- 10Orange peel (1 tbsp)
- 11Cinnamon (1 tsp)
- 12Garnish: pomegranate seeds, chopped walnuts, pistachios, dried apricots, cinnamon, rose water, sesame seeds
Instructions
- 1Cook wheat berries, chickpeas, and beans separately until tender.
- 2Cook rice until soft.
- 3Combine all cooked grains and legumes in a large pot, cover with water, bring to boil.
- 4Add sugar, dried fruits, orange peel, and cinnamon. Simmer 20 minutes stirring constantly.
- 5Add rose water and stir.
- 6Pour into serving bowls, cool to room temperature.
- 7Refrigerate for 2–3 hours.
- 8Garnish generously with pomegranate seeds, nuts, dried fruits, and a drizzle of rose water before serving.
